Farm Apple Cake

1 cup oil

2 teaspoons cinnamon

2 eggs

1 teaspoon nutmeg

 2 cups sugar

5 cups raw, peeled, thinly sliced apples

 2 cups sifted flour

1 cup chopped nuts

 1 teaspoon salt

3 Tablespoons lemon juice

 1 teaspoon baking soda


Beat oil & eggs, add sugar and continue beating. Sift flour, soda, salt, cinnamon and nutmeg together; add to oil, eggs and sugar batter. Stir apples and nuts into batter. Put into greased, floured 9x13-inch pan. Sprinkle with lemon juice. Bake 55-60 minutes at 350 degrees. Frost after cake is cool or leave unfrosted.

FROSTING: 1 cup ea. brown & white sugar, 1/2 cup cream, 1/2 teaspoon salt, 2 Tablespoons butter. Boil to soft boil, remove from heat. Let set 20 minutes. Beat salt and butter in and beat until creamy.
